Recipe for maco's patented fish soup
====================================

Suitable for: 4-6 persons depending on how hungry you are

Ingredients:
============

3-4 large onions
1 fennel
2-5 chili peppers depending on size and how hot they are
1 whole garlic
1g of saffron
1 lemon
3 limes
10-15 mushrooms depending on size (pick your favourite shroom, I prefer shiitake)
1 large bell pepper or 2 smaller, pick something that will add color to the soup
500g of crushed tomatoes
100ml of fresh or frosen green peas
500ml dry white wine
500ml of water
100ml of fresh shrimps (frozen does ok, but fresh kicks ass!! If using frozen they should be thawed first)
10-12 fresh clams (make sure they're good; they should be intact and closed or close if you tap them)
500g of fish suitable for soup, salmon always work and so does cod but pick your favourite(s)
Fresh or frozen herbs; basil and parsley
Salt and pepper
200ml of olive oil

Preparations:

Chop the onions into small pieces
Chop the fennel and bell peppers into larger pieces
Slice the chili peppers
Crush the garlic
If needed, cut the mushrooms into sutiably sized pieces
Cut the fish into suitably sized pieces

Cooking:
========
Put a large pot on the stove and add all the olive oil; heat until frying hot...
Add the chopped up onions and stir for a minute or two
Add the sliced chili peppers and garlic; again stir for a minute or two
Add the mushrooms and a few pinches of salt, stir for a bit longer this time... let's say 3-4 minutes
Add the chopped fennel, the saffron and the crushed tomatoes; mix the ingredients thoroughly
Add the wine and water and let it boil up; while waiting for it to boil squeeze the juice from the lemon and limes into the soup
Add the fish and clams; boil SLOWLY 5-6 minutes or until the clams are open, you don't want the fish to fall apart
Add the bell pepper, green peas (dosn't matter if they're frozen or not), the herbs (use lots of herbs!) and the shrimps; turn of the heat and let sit for a minute or two

Taste the soup and add salt and/or pepper to your satisfaction. If you want more lemon or lime you can add it at this stage too. If you want a hotter soup you can add some cayenne pepper at this stage.

Serve immediately, bon apetit!
