Peanut Butter Chocolate Space Cookies

1 1/4 cups   canabis-butter
2 cups sugar
2 eggs
2 tsp vanilla
2 1/2 cups   all purpose flour
3/4 cups cocoa powder
2 heaping tsp instant coffee(nestle's nescafe recomended)
1 tsp baking soda
1/2 tsp salt

optional
1/2-3/4 cups peanutbutter chips


Preheat oven to 350F. In a large bowl mix flour, cocoa powder, instant coffee, baking soda, and salt until well blended. Set dry mixture aside. Cream the pot-butter and sugar until smooth. While mixing add eggs and vanilla one at a time alowing time to blend. Slowly add dry ingredients, and chips if desired. Remember to scrape down the sides of your mixing bowl with a rubber spatula or the like. Once thoughoughly mixed press tablespoon sized balls onto ungreased nonstick cooking sheet. Bake for 8 to 10 minutes, until toothpick comes out clean. Use ball of spoon to slightly smash the tops of the cookies as soon as you take tem out of the oven, let cool on baking sheet about 1 minute before transfering to wire rack to totaly cool. Makes 24 - 30 cookies.


Canabis Butter:
Grind plant material and add to boiling water. Boil for 30 minutes to an hour, stir frequently so the material does not burn on the sides or bottom. Lower heat to simmer add softened butter, stir constantly. Simmer for 15 to 30 minutes. Strain mixture through a cheesecloth or clean tshirt, pour some extra boiling water though to make sure all the butter strains through. Put the butter/water mixture into the fridge, soon it will seperate with the butter floating on top. Remove and breifly dry on paper towel.
