Breakfast Burrito

Just decided to try and make something kinda western today. I remembered the breakfast burritos at McDonalds, and thought I could make one better.

Well, it's very easy!

1 Chipotle Tortilla
3 Small-Medium Eggs
3 Drops Tabasco
1 Dash of Half and Half
8 Drops of Habenero Pepper Sauce
   Diced Green Pepper
   Diced Shallot
   Chedder or Pepper Jack Cheese

So I buttered up a pan really good, cracked three eggs, whipped them up, splashed a dash of cream put them on at Medium/Low heat. It's important not to cook them too fast.

While still a liquid, I put in the Tobasco and the Green peppers (To get them a bit softer).

Stir constantly.

Once the eggs start to get fluffy and solidify, I threw in the diced shallots. It's my belief you can put in as many shallots as you want... into anything!

This is the point where I threw the tortilla on the stove. After it heats up a bit, put two slices+ of cheese on. Then heat until that melts.

Once them eggs are nice and fluffy, throw them on the tortilla with pepper sauce, wrap, heat some more, and dine!

It was very easy and much better than any old morning toast :P

I prefer the pepper jack to Cheddar in my breakfast burritos.

For bulk you can add potatoes.  I used to make similar burritos by nuking potatoes, scrambling eggs, and grating cheese into the mix then stirring it up.  Would have been good with green onions...
