Swordfish

I'm looking around for some swordfish recipes for next week or so. If you have any ideas lemme know.

We like to blacken swordfish, by dusting steaks with a cajun rub before heating a cast-iron pan to the point of smoking a little and then adding fish. Cook each side for three minutes or so. Serve with saffron rice and a steamed veggie.

maybe I'll bump that swordfish meal up to tomorrow, sounds delicious!

I use a black skillet with a small bit of oil added just before blackening the steaks. Peanut works well, or any oil that handles a high temp.

I also like to steam asparagus for about six minutes, adding a little fresh minced ginger and maybe a little garlic at the beginning of the process.

We also like to grill swordfish over a wood fire and top with a little butter infused with lime just before serving.
