Title: Hot Wings!

So as a hot wing enthusiest, I recently started trying to make my own.  Not wanting to deep fry them I tried baking and even pan frying them.  Both methods cause the wings to be clammy so that the sauce didn't stick...and they just tasted like crap.  I'm sure many have found this out already, but today I got around to grilling them.  Just grill plain wings til crispy and add Frank's red hot.  it's that simple.  They're better than 90% of the wings you'll get out at a bar or restaurant.  I'm so excited I thought I'd share.

They need to be baked at pretty high temps (425-450 F) after getting a coating of oil. A convection oven prolly works a little better.

We like the Franks, too, but do add a little butter to the sauce before heating.

Yeah...the butter is the traditional way to go, but I omit it for the sake of reducing fat...not that wings are such a healthy food.  I could probably drink Frank's it so good, so it works on its own for me.  


I didn't think about adding oil before baking.  I guess that will be good when I don't feel like grilling...but if anyone hasn't tried it I think the grill is better than deep frying because there's that BBQ flavor under the taste of the sauce.  I hate reheated wings, but i had some leftovers tonight and they weren't half bad.    :wink:

I used to work at a family owned chicken joint...  (sort of like the KFC's and the like, but they only had three joints running in the county)   Everyon raved about  thier lip-smackin, savory sauce.  One day I saw 'em making it up...  They used Franks and butter in a 80/20 ratio, threw in a healthy pinch of salt, pepper and celery seed!!!  Voila !!  Great sauce/super fast-n- easy 8) ----------- sal
